About the wine
From the organic/biodynamic Cheverny trailblazer Phillippe Tessier, this is Gamay/Côt/& Pinot from younger vines (~15-20 years-old) planted in clay/limestone soils. Grapes see a 15-day carbonic maceration in tank followed by pressing and a short maturation also in tank. Unfined, unfiltered, minimal added SO2 at bottling.
