100% Chenin Blanc 1.5 hectares of old bush vines in Swartland, South Africa only 30 km from the ocean.
100% destemmed, the wine spontaneously ferments on the skins for 8 days prior to pressing into 3300L oak foudre and 1500L neutral barrel. 4 month maturation is followed by blending and aging in 10,000L fiberglass tank. Unfined, coarsely filtered, minimal SO2 at bottling. 12%ABV
