The Details
This is a vibrant, medium-bodied orange wine from iconic New Zealand natural winery The Hermit Ram, a project co-run by Theo Coles and Gareth Renowden (whose Limestone Hills vineyard in Waipara Gorge was the site of its genesis), covering several different vineyard sites in the North Canterbury region of New Zealand's South Island.
Vinification: 100% Sauvignon Blanc hand-harvested, the grapes are destemmed and undergo spontaneous fermentation with only native yeasts on the skins for 6 weeks, the juice is then gently pressed into old barrels where it undergoes natural malolactic fermentation after which it is immediately bottled. Unvined, unfiltered, no additional SO2. 12.5% ABV
