The Details
Théo's take on an old-school Alsatian Edelzwicker! Biodynamically cultivated Auxerrois/Pinot Blanc/Riesling/Muscat from 25 year-old vines on clay/limestone soils in Rosenwiller in the north of Alsace. Grapes are hand-harvested and pre-fermentatively macerate for 30 hours prior to pressing. Each variety is vinified and matured separately prior to blending. Spontaneous fermentation and aging is 8 months prior to blending, all in stainless steel. Bottled unfined, unfiltered, no additional SO2.
