The Details
From the legend that is Thierry Germain (Domaine des Roches Neuves) in Saumur, this is 90% Chenin Blanc, 5% Cabernet Franc, & 5% Chardonnay from 60 year-old biodynamically cultivated vines in clay/limestone soils. Grapes are hand-harvested, directly pressed and spontaneously ferment in 228L neutral barrels for 3 months then bottle aged for 9 months sur latte prior to disogorgement and bottling with some of the same wines frozen must to kickstart secondary fermentation (zero dosage) in bottle a la Méthode Traditionelle. Unfined, unfiltered, minimal added SO2.
