The Details
A very rare pét-nat from Thierry! Working in Jasnières, this is a pét-nat (ancestral method sparkler) composed of Seibel, Chenin Blanc, & Pineau d'Aunis. Grapes are whole-bunch directly pressed for spontaneous fermentation, bottled with a bit of residual sugar to finish primary fermentation to dryness under crown-cap. Disgorged after 4 months. Aged thereafter in bottle for 10 months prior to release. Bottled unfined, unfiltered, no additional SO2. 12.5%ABV
