The Details

100% organically cultivated Chenin Blanc from 25-40 year-old vines sandwiched between Huet & Foreau in Vouvray. Grapes are hand-harvested in several passes a bit riper on the vine than for his entry "Les Vrilles." Directly pressed to neutral barrel for spontaneous fermentation for 12 months before racking to fiberglass for the final 6 months of its vessel-borne life -- this was blended with a small portion (~20%) of the wine that was vinified and aged separately over this same time period, all in stainless steel. Bottled unfined, unfiltered, no additional SO2. 12.72% ABV
