The Details
From the Le Puech parcel in Saint Chinian in the Languedoc via Thomas Rouanet, this is a classic southern French blend of 50 year-old Carignan/Grenache. Grapes are hand-harvested from clay/limestone soils and vinified in the millefeuille method -- Carignan whole-bunch, Grenache destemmed. Three week maceration is followed by pressing and élevage in fiberglass for 9 months before bottling unfined, unfiltered, minimal added SO2. 13% ABV
