The Details
From a combination of young and old-vines biodynamically cultivated by Tristan Rampon in Saint Jullien just south of Cru Beaujolais. 75% are from a 15 year-old vineyard, 25% come from the older vines in the Aux Arbres plot (~75 year-old vines). Grapes are hand-harvested from the old-vine plot first, macerate whole-cluster for 5 days. Young-vine harvested follows where 50% of the volume is added whole-cluster to the Aux Arbres juice and 50% of the volume is directly pressed and added to the mixture. This setup remains macerating for 10 more days before pressing. Aging for 13 months in concrete before bottling unfined, unfiltered, no additional SO2.
