The Details
From the Luberon in central Provence, this sparkler is 100% Gros Vert, an ancient variety of the region the winemaker calls "an iconic cépage of Provence."
The grapes are directly pressed in a temperature controlled environment and undergo spontaneous fermentation prior to bottling at 20g/L residual sugar to "encourage sparkling evolution in the bottle," according to Valentin's importer. Three months on the lees, disgorged in December 2021 followed by 3 additional months on the fine lees. Unfined, unfiltered, no additional SO2.
