The Details

50/50 old-school "Pineaux" blend -- Pineau de La Loire (Chenin Blanc!) and Orbois (Menu Pineau!). Grapes are organically farmed and extremely old -- 130+ years-old, some of the only pre-phylloxera vines in the region, perpetuated by the farming method of burying a cane in order to sprout new roots, also known as provignage. Grapes are hand-harvested, destemmed and directly pressed. Spontaneous fermentation in vat prior to aging also in vat for up to a year. Bottled unfined, unfiltered, minimal (<15ppm) added SO2.
