The Details
From Primošten on the Dalmatian Coast of Croatia, this is a co-ferment of Debit and Plavina with, depending on vintage, some Marastina & Lasin. Grapes are organically cultivated on 30 year-old vines planted to limestone/dolomitic rock. Grapes are hand-harvested and co-ferment after 65% of the grapes macerate for 3 days and 35% just for 7 hours. Pressed to neutral oak where spontaneous co-fermentation and aging sur lie for up to 10 months takes place. Bottled unfined, unfiltered, minimal (10ppm) added SO2.
