The Details

From regeneratively farmed vines in the Marne (a parcel named Voyet in the town of Pouillon), amidst a vineyard cultivated also according to agroforestry and low to no till farming, this is 100% Pinot Meunier. Grapes are hand-harvested, directly pressed and spontneously fermented in tank before bottling with no dosage (secondary fermentation is with same juice). 36 months aging sur latte before manual hand-disgorgement in April 2024. Unfined, unfiltered, 30ppm added SO2 overall.
