The Details

Pantelleria, the island closer to Tunisia than it is Italy. 100% Zibibbo di Pantelleria from organically cultivated vines aging 30-60 years. Grapes are hand-harvested, macerate for 2 days prior to pressing. Spontaneous fermentation and maturation are in stainless steel tank for about 12 months. Bottled unfined, unfiltered, minimal added SO2. 11%ABV
