The Details
100% organically cultivated Xarel-lo from Tarragona in Catalonia planted to clay soils. Grapes are hand-harvested, directly pressed, spontaneously fermented in tank prior to bottling with residual sugar to finish primary fermentation under crown cap, capturing carbonation as the wine ferments to dryness a la ancestral method. Unfined, unfiltered, minimal (<25ppm) added SO2.
