The Details
100% Tempranillo from 60-year-old vines, planted in granite soil. Natural yeast fermentaiton in stainless steel, then 6 months elevage in large, neutral barrique. No fining or filtration, zero SO2. The name comes from an Italian fairy tale told to Fabio in his youth (not that he can remember the plot) and is non-vintage, as Fabio is not allowed to have a vintage on his deliberately non-DO wine. This is a juicy and racy Tempranillo that we insist you save a bit to drink on Day 2. Fabio's wines are as alive as they come - this wine will evolve dramatically over several hours, not towards mouse, but away from its initial dragonesque nature into something equally savage and sage.
