The Details

100% Silvaner from organically (+biodynamic treatments) cutivated vines in Franconia. Grapes are hand-harvested from 23-29 year-old vines planted to a mix of soils types and expositions (4 small plots). Foot-stomped and macerated overnight, the grapes were pressed the following day from their harvest. Spontaneously fermented and aged in 1100L untoasted single-use barrel made with wood from Swawbischer Hall in addition to a neutral 500L acacia barrel. The wine was bottled after about a year in barrel unfined, unfiltered, minimal added SO2 (analysis read the wine prior to release as 21 ppm total). 10% ABV
