The Details

From organically cultivated (with biodynamic treatments used) vines in Franconia, this is a "Rotling," old-style of German wine that is currently finding new life. 60% Müller-Thurgau, 40% Domina, both négoce from a friend nearby. Handh-harvested, dsetemmed and co-macerated for 3 days prior to pressing and co-fermentation in neutral 500L barrel for 1 year before bottling unfined, unfiltered, minimal (<20ppm) added SO2 and a further 6 months in bottle before release. 11.5% ABV
