The Details
From organically cultivated vines in Franconia, this is a field-blended parcellaire wine of Domina (mainly) with Scharzriesling, Pinot Gris, and a smattering of red PiWi varieties: Cabernet Jura, Cabertine, Cabernet Cortis, and Monarch. Regent, Domina and red PiWis are foot-stomped and macerate overnight prior to pressing. Schwarzriesling was destemmed and macerated for 5 days. Pinot Gris on the skins for 5 days. Spontaneous co-fermentation and aging in a combination of stainless steel and neutral barrel for 1 year before bottling unfined, unfiltered, minimal (<20ppm) added SO2.
"Schlado" is a contraction / acronym of an old saying "Scheiß langer Donnerstag" (tr: Shitty Long Thursday) that took hold from 1989-1996 when German stores nationwide were required by law to stay open until at least 8:30 PM on Thursdays. Long hours? Most likely it's Schlado.
