The Details

25% Müller-Thurgau, 25% Bacchus, 25% Muscaris, 25% Johanniter from organically (with biodynamic treatments) cultivated vines in Franconia. Grapes are hand-harvested from a combination of young (16 year-old) and older (50ish years-old)  vines planted to the gypsum soils of Franconia. Each variety was vinified separately. Whole-cluster foot-stomping and pressing the following day for Muscaris, Johanniter, Müller Thurgau. The Bacchus was destemmed and macerated for 7 days. Élevage 50/50 in 500L neutral barrel (for the Johanniter and Bacchus) and stainless steel (Müller-Thurgau and Muscaris). Blending before being bottled unfined, unfiltered, minimal (< 20ppm) added SO2.
