The Details

100% Sauvignon Blanc from Alto-Adige - biodynamically farmed young vines (13-33 year-old vines). Grapes are hand-harvested and 30% of the grapes macerate for a few weeks while 70% are directly pressed. Spontaneous fermentation and aging for 1 year in large neutral barrel. Unfined, unfiltered, minimal (<15ppm) added SO2 just at bottling.
