The Details
Secret Pfifferling! Done in collaboration with Thibault Pfifferling (of L'Anglore), this wine takes Syrah/Grenache/Cinsault from L'Anglore vineyards as its base. Hand-harvested, grapes are vinified separately -- the Grenache and Cinsault are co-carbonically macerated meanwhile the Syrah is directly pressed. Spontaneous fermentation and aging for up to 9 months took place in a combination of concrete tanks and neutral barrels. Bottled unfined, unfiltered, no additional SO2.
