The Details

From the Thracian Valley of Southern Bulgaria near the western coast of the Black Sea, this is 50% Dimyat 50% Rkatsiteli. Grapes are hand-harvested from organically cultivated vines, directly pressed to stainless steel vat where spontaneous fermentation begins and the wine is bottled prior to the completion of primary fermentation, capturing CO2 a la ancestral method. Disgorged after ~6 months in bottle. Unfined, unifltered, no additional SO2.
