This is the wine formerly known as Axel's 'Brutal' or 'Fatal Brutal,.' Lively and light as ever (9.7%ABV!!!), cinsault in a pure, unvarnished form. The cuvée's name comes from an old poster during the largely student-led student May '68 protests in France; it translates to "Capitulation Does Not Pay!" Axel Prüfer tends 8.5 hectares of vines in La Tour-sur-Orb in France's Languedoc.
Vinification: 100% Cinsault hand-harvested at first pass from vines grown in decomposed limestone, quartz, and granite soils. The grapes undergo 5-7 days carbonic maceration prior to pressing. Spontaneous fermentation begins in carbo. and finishes after pressing (ambient yeasts; no temp. control) before a roughly 6 month élevage. Bottled unfined, unfiltered, no additional SO2. 9.7%ABV
