Every year the lightest of the bunch - potentially his most sought after cuvée. The wine that defines the upper end of his "ethereality," 'Capitulation' is fresh, light, floral and scrubby all at once harmonized in faint, subtle tones.
Tech: Cinsault base passed through the marc/pomace of the Chardonnay to coax out aromatics and acidic structure. Bottled unfined, unfiltered, no additional SO2. 10.5% ABV
