Translated as "The Jester" this is a light to medium-bodied delight with exceeding minerality and chalky tannins though the wine (a blend of Grenache, Carignan, and Cinsault) sings above its structural and textural elements with really excitingly complex aromatics (it has a kind of Alsatian-perfumed element to it). From Axel Prüfer who tends 8.5 hectares of vines in La Tour-sur-Orb in Southern France's Languedoc.
Vinification: 1/3 each of Grenache, Cinsault, and Carignan hand-harvested from vines grown in decomposed limestone, quartz, and granite soils. The grapes spontaneously (ambient yeasts; no temp. control) co-ferment with, first, a short carbonic maceration before pressing. Élevage lasts ~6months or so before being bottled unfined, unfiltered, no additional SO2. 11.5%ABV
