This is a Red Burgundy from the steeper, more well-exposed vineyards that Marc Soyard of Domaine de La Cras tends among his 8 hectares of vines on the slopes surrounding Dijon, the capital of Burgundy.

Vinification: 100% Pinot Noir hand-harvested (with sorting done at the vine) from 37 year-old vines grown in clay-limestone soils. The grapes undergo whole-cluster, spontaneous semi-carbonic fermentation (with punch-downs) with the help of native yeasts before maturing for 15-18 months in oak barrels of which 30-40% are new. Unfined, unfiltered, with minimal SO2 at bottling.

Producer Spotlight
Marc Soyard hails from the Jura region of far eastern France and, after being selected in 2013 by the city of Dijon to tend to the 8 hectares of vines at the old Domaine de la Cras, makes the only wines in the world allowed to use the designation "Coteaux de Dijon."
