This is a gem-like and rounded, haunting and profound White Burgundy from Marc Soyard of Domaine de La Cras who tends 8 hectares of vines on the slopes surrounding Dijon, the capital of Burgundy.
Vinification: 100% Chardonnay hand-harvested (sorting at the vine) from 35 year-old vines grown in clay-limestone (with marl underneath) soils at the Grand Bessy vineyard site. The grapes undergo spontaneous fermentation (and complete malolactic fermentation) with only the help of native yeasts before maturing for 15-18 months in half new/half neutral oak barrels. Unfined, unfiltered, with no SO2 at bottling.

Marc Soyard hails from the Jura region of far eastern France and, after being selected in 2013 by the city of Dijon to tend to the 8 hectares of vines at the old Domaine de la Cras, makes the only wines in the world allowed to use the designation "Coteaux de Dijon."
