The Details
This is a weighty, complex White Burgundy from Marc Soyard of Domaine de La Cras who tends 8 hectares of vines on the slopes surrounding Dijon, the capital of Burgundy.
Vinification: 100% Chardonnay hand-harvested from 35 year-old vines grown in clay-limestone (with marl underneath) soils at the Grand Bessy vineyard site. The grapes undergo spontaneous fermentation with only the help of native yeasts before maturing for 10-12 months in used oak barrels. Unfined, unfiltered, with minimal SO2 at bottling.
Producer Spotlight
Marc Soyard hails from the Jura region of far eastern France and, after being selected in 2013 by the city of Dijon to tend to the 8 hectares of vines at the old Domaine de la Cras, makes the only wines in the world allowed to use the designation "Coteaux de Dijon."
