The Details
From Calabria. 100% Gaglioppo from massale selection. This parcel- Vigna Fego- has clay/marl soils, and is very close to the ocean; farmed organically, with cover crops and wild herbs. After crushing and destemming, the grapes macerate for 12 hours in stainless steel without temperature control, after which they are not pressed, but drained by gravity. Fermented with native yeast, and no temperature control; 100% malolactic. Aged 8 months in stainless steel.
