This is a plump, delectable sparkler from Agustí Torelló Sibill of Anima Mundi who works in northeast Spain's Penedes.
Tasting Notes: Gorgeously round, with layers of toast, ripe pear, lime and oyster. Very delicate mousse, firm but friendly acidity, perfect for all fish and fries. Gorgeous.
Vinification: 100% Macabeo from 50 year-old north-east facing vineyard ‘Noguer Baix’ on very chalky soils. Organically farmed in accordance with the lunar calendar. Direct press of whole bunches, natural fermentation without inputs in clay amphora. Fermentation finishes in bottle, after which the wine ages on the yeast for 2 years.
