This is dramatic, head-swirling, superlative-searching Xarel-lo from Agustí Torelló Sibill of Anima Mundi who works in Spain's Penedes.
Tasting Notes: Absolutely glorious structure, similar to the best of a Savennières. Full harmony between the grape’s inherent iodine earthiness, the slight reduction and crunch of the winemaking, and the long salty finish. Haunting and immaculate.
Vinification: 100% Xarello from 40 year-old north-east facing vineyards on very chalky soils. Organically farmed in accordance with the lunar calendar. After a short maceration it is pressed and fermented without additives in amphora and old barrels. Elevage of 6 months, bottled unfiltered and without SO2.
