The Details
The collaboration in Empordà between Salva Batlle (Cosmic Vinyaters) and David Baixas, this is "Amor Per La Terra" and this particular bottling is their pét-nat of 50% Parellada, 40% Macabeu, 10% Xarel-lo from organic vineyards in Aiguamúrcia planted at 470m in clay/limestone soils. Hand-harvested before a cold-maceration of 2 days prior to pressing into stainless steel tank where spontaneous fermentation takes place. The wine is bottled a la ancestral method, prior to completion of first alocholic fermentation so bubbles are captured under crown-cap. Unfined, unfiltered, no additional SO2. 10.5%ABV
