60% Tardana and 40% Macabeu from 30-60 year old vines, co-fermented and macerated on the skins for 5 days. Rested in stainless steel, bottled without fining, filtration or sulfur. Nothing smells like summer like macerated Tardana - stick your nose in the glass for a long time to soak up the orange blossom, honeysuckle and wild thyme. The palate is ocean fresh, ripe grapefruit and melon rind, with an elegant bitter finish that is long and persistent.
