The Details
The grapes used for this wine were harvested by hand and then pressed directly. After settling overnight, the juice was transferred to a tank for fermentation. It was later aged in old barrels. This wine is unfined and unfiltered. According to the winemaker, tasting this wine evokes the feeling of being under a Norfolk Island pine tree with a refreshing ocean breeze and a hint of salt in the air. The winemaker envisions someone shucking oysters directly into their mouth while they drink this wine straight from the bottle with a straw. In this moment, nothing else matters and the winemaker couldn't care less about anything other than the present. They describe life as cool and balanced, and consider this wine their favorite among all the wines they have made so far.
