100% Spergola from organically cultivated 25-51 year-old vines. Grapes are hand-harvested, macerate for 3 days prior to pressing. Spontaneous fermentation in tank prior to bottling unfined, unfiltered, no additional SO2 but with the addition of fresh must to kickstart secondary fermentation in bottle. Frizzante!
