100% Xarel-lo from a south-facing vineyard. 60+ year-old bush-vines on clay-loam/calcareous soils. Partially destemmed, whole-cluster integration. Maceration lasts 8 days in inox tanks prior to gentle pressing. Matured 6 months thereafter in inox tanks prior to bottling unfined, unfiltered, no additional SO2. 11%ABV
