The Details

Mallorca, Spain. Escursac, Callet, Callet Negrella, Esperó de Gall & Giró Negre. The different varieties fermented separately in stainless and some ceramic amphoras, with an average of 30% left whole cluster and about 30-40 days maceration on the skins. Aged in a mix of neutral French oak and stainless steel for 6 months. Bottled unfined, unfiltered, no SO2.
