The Details

From biodynamically farmed vines in the Penedes of Catalonia, this is 85% Macabeu, 10% Xarel-lo, 4% Sumoll, 1% Malvasia de Sitges. Grapes are hand-harvested and macerate/spontaneously ferment whole-cluster for 1 week prior to pressing. Fermentation finishes inside an underground, tile-lined fermenter where it is then aged for 6 more months. Bottled unfined, unfiltered, no additional SO2. 9% ABV!
