The Details

Biodynamic. 100% Macabeu. L’Ermot is made from two special plots: the L'Ermot parcel of 1 ha planted on clay-calcaire soils in 1942 and El Gana, a tiny plot immediately adjacent to Toni's house, planted in 1965 on sandy loam soils. Both heritage vineyards give naturally low yields and very small, concentrated grapes. Given this concentration, Toni uses 2 days of skin contact before doing a gentle direct press followed by co-fermenting in a stainless steel tank. Aged in the same tank with the lees for 7 months. Unfined, unfiltered, zero SO2 added.
