The Details

Catalonia, Spain.  100% Macabeo sourced from vines only 10 km from the Mediterranean and rooted in clay, shale, mudstone, and marl. The grapes are hand-harvested and macerated in stainless for 7 days. Fermented with wild yeasts in both amphora and stainless steel and aged for 6 months. Unfined, unfiltered, no SO2.
