The Details

Organically cultivated Shiraz, Carignan and Graciano from Adelaide Hills, South Australia. Grapes are hand-harvested and vinified separately -- Shiraz gets 70% destemming 30% whole-bunch spontaneous fermentation and aging in neutral barrel (20% of which is newer French oak - one use) and the Carignan and Graciano spontaneously ferment 90% destemmed 10% whole-bunch prior to aging in fully neutral barrel. Unfined, unfiltered, minimal added SO2.
