The Details
From 65 year-old organically cultivated vines in the Hautes Cotes de Beaune atop red clay/limestone soils, this is 100% Pinot Noir. Grapes are hand-harvested, 12-day whole-bunch macerated/spontaneously fermented prior to pressing and a 13 month élevage in neutral barrel. Bottled unfined, unfiltered, minimal (10ppm) added SO2.
