The Details
100% Pinot Noir from vines in organic conversion in Chorey-les-Beaune. Grapes are hand-harvested, and macerate for 2 weeks prior to pressing. Spontaneous fermentation and élevage in neutral barrel for 12 months prior to bottling unfined, coarsely filtered, minimal (<25ppm) added SO2.
