The Details
100% Trebbiano di Spagna (aka Trebbianina - the name of this cuvée being an anagram), a rare variety grown by only a handful of farmers near Modena in Emilia-Romagna. Grapes are hand-harvested from old-vines, destemmed and gently pressed to stainless steel for spontaneous fermentation. Some unfermented grape must is added and bottled the following spring for secondary fermentation in bottle. Unfined, unfiltered, no additional SO2. 14% ABV
