The Details

100% biodynamically cultivated Grolleau from schistous soils (vines average 60 years-old). Grapes are hand-harvested, whole-cluster macerate for 5 days before pressing. Spontaneous fermentation and aging for 5 months sur lie all in neutral barrel before bottling unfined, unfiltered, no additional SO2. 11.7% ABV
