100% Grolleau Noir from Jean-François Chéné's old vineyard in Beaulieu-sur-Layon - the vines haven't seen chemicals in 21+ years and have been farmed biodynamically. This is partial-carbonic (destemmed+whole-cluster) maceration for 10 days before pressing. ~24 month élevage in neutral barrel. Zero/zero. 10% ABV
