The Details
100% organically cultivated (with biodynamic preparations) Chardonnay from 9-21 year-old vines in a parcel on a steep west-facing slope at the exit of the village of Monthelie, literally sloping beneath the cellars of houses higher on this hillside (ergo the name!). Grapes are hand-harvested, slowly directly pressed and slow-spontaneously ferment in 350L neutral barrel. Aged for 10 months in neutral barrel prior to bottling unfined, unfiltered, minimal (<15ppm) added SO2.
