The Details

AOC Cheverny. 95% Pinot Noir / 5% Gamay from a single organically farmed 1.2 hectare plot of estate vines ini the 40 year-old range - the soils are gravelly clay-limestone. Grapes are hand-harvested, whole-cluster/semi-carbonically macerate, spontaneously ferment in vat before aging for 6-9 months in a combination of demi-muid and neutral Burgundy barrel. Bottled unfined, unfiltered, no-to-low-SO2 added depending on vintage.
