The Details

100% Gamay from organically cultivated 40-65 year-old vines in the Touraine portion of Tue-Boeuf's vineyards. Grapes are hand-harvested, whole-cluster, open-top semi-carbonically macerate/spontaneously ferment prior to pressing and racking to neutral Burgundy barrel where the wine ages for 6-8 months. Bottled unfined, unfiltered, no-to-low additional SO2 depending on vintage.
